Mini Quiches

Ingredients

  • 6 Eggs
  • 3 Tablespoons Milk
  • 1/4 Teaspoon Salt
  • 1/4 Teaspoon Pepper
  • 1/2 Cup Chopped Cooked Bacon, Ham or Shredded Chicken
  • 1/2 Cup Diced Tomatoes
  • 1/3 Cup Diced Onions
  • 1 Cup Cheese

Instructions

  1. Preheat Oven to 180C and spray Muffin Tray well with cooking oil
  2. Grate the cheese, cook the bacon and dice if using, as well as finely dicing any vegetables you use and set aside.
  3. In a medium bowl add the eggs and milk and whisk well
  4. Add the salt and pepper and whisk
  5. Add the cheese, bacon and other vegetables and combine.
  6. Spoon into the prepared muffin tray and bake for 15-18 minutes until they spring back to the touch.
  7. Allow to cool in the muffin tin and carefully remove. If freezing, allow to cool completely before freezing.
