Honey Garlic Meatballs

Ingredients

For the meatballs:
  • 1 lb. ground beef
  • ½ cup breadcrumbs
  • ⅓ cup onion, finely chopped
  • 1 tablespoon green onions, finely chopped (plus more for garnish)
  • 1 egg
  • 2 tablespoons soy sauce
  • ½ tablespoon brown sugar
  • 1 teaspoon garlic powder
  • ½ teaspoon salt
  • ½ teaspoon ground black pepper
For the honey garlic sauce:
  • ¼ cup rice vinegar
  • 2 tablespoons brown sugar
  • 2 tablespoons soy sauce
  • 2 tablespoons liquid honey
  • 1 tablespoon garlic, minced
  • ½ tablespoon cornstarch (or flour)
  • 2 tablespoons water

Instructions

  1. Preheat the oven to 400 degrees.
  2. Mix together the meatball ingredients.
  3. Place a sheet of parchment paper on a baking sheet and spay with olive oil.
  4. Roll meatballs into approx. 1.5 inch balls and place on prepared baking tray.
  5. Bake for about 15 minutes or until cooked all the way through.
  6. Mix together the ingredients for the sauce.
  7. In a shallow pan, heat sauce for 3-4 minutes or until desired consistency.
  8. When both meat balls and sauce are done, toss together and serve over rice.
